Cooking with Ease: Berry Lovers Rejoice
Berry Lovers Rejoice June is the month to think about all of the wonderful ways we can enjoy luscious Canadian grown strawberries. Here are a few ideas and recipes for White Wine Sangria and Great Gramma’s Homemade Strawberry Jam. Try adding freshly sliced strawberries to a garden salad. Garnish the salad with your favourite type of nuts, black pepper and a store bought mayo/sour cream dressing or low calorie version. White wine sangria, can be made with Champanade, a sparkling non-alcoholic drink or dry white wine. Click here to read the recipe. Give the gift of jam for a year. Just make sure that the receivee returns the empties every month so that they can receive more. Go to a strawberry festival somewhere in your town or surrounding area. If you have a strawberry related event taking place at your church, community centre, or business as a fundraiser add it to our events calendar. Great Gramma’s Homemade Strawberry Jam Note: Do not cook more than double the recipe at one time, as it will boil over. 1 dozen small jars (250 ml) with lids 4 cups crushed strawberries (tip: do not puree, a potato masher works well) Start sterilizing jars in dishwasher, if possible one hour before starting to cook the recipe. If you don’t own a dishwasher simply boil the jars and lids for 5 minutes just before using. Place berries in a large pot. Add vinegar and lemon juice. Bring to a full, rolling boil. Boil 3 minutes stirring constantly. Add sugar, stir and bring back to a full, rolling boil. Boil 6 minutes, stirring often. Skim foam off the top. Put a bar of wax into a can over boiling water, until melted. Using oven mitts, squeeze jar to form spout. Pour a thin layer of paraffin immediately over the jam filled jars. Let stand until cold. Cover with another thin layer. Wiggle the wax to make sure the wax covers the side of the jar. Make enough to share with family and senior neighbours.
